Halibut and Potatoes with Cilantro Sauce
Ingredients
12 red potatoes
1-1/2 cups chicken broth
1/2 cup dry white wine
1 Tbsp garlic, minced
1-1/2 lbs halibut, boned
1 Tbsp cornstarch
1/2 cup fresh cilantro, chopped
Salt
Pepper
Method/Steps
1. In a large pot set over high heat, bring potatoes, broth, wine and garlic to a boil. Cover, reduce heat and simmer 15 minutes.
2. Rinse fish and cut into equal pieces. Add to pot and return broth mixture to a boil over high heat; cover, reduce heat and simmer just until fish is opaque , about 10 minutes. Lift fish carefully out of pot using a slotted spatula. Arrange potatoes with fish on serving plates; keep warm.
3. In a small boil, mix cornstarch with 1 Tbsp water until smooth. Add to broth mixture set over high heat and stir until mixture boils, about 1 minute. Stir in cilantro and add salt and pepper to taste.

Spoon sauce over fish and serve with a chilled glass of Pouilly-Fumé.
