Grilled Flank Steak with Chili-Lime Marinade
Ingredients
1/4 cup olive oil
1/2 tsp grated lime peel
1/3 cup lime juice
2 garlic cloves, minced
1 fresh jalapeño chili, stemmed, seeded and minced
1/2 tsp cracked pepper
1 flank steak, fat trimmed
Method/Steps
1. In a sealable plastic bag, combine oil, lime peel, lime juice, garlic, chili and pepper. Add steak, seal bag, and rotate to coat meat with marinade. Set bag in a cooler and let stand 1 hour or overnight. Turn bag occasionally.
2. Grill steak, turning once, brushing with marinade as it cooks. 3. To serve, cut meat across the grain into thin, slanted slices. Set aside about 1/4 of the meat; when cool, enclose it in a plastic bag and chill for use the next day.
