Golden Beets with smoked Trout and Dill
Ingredients
12 small golden beets
2 Tbsp olive oil
1 tsp salt
4 oz cream cheese at room temperature
1 smoked trout fillet, broken into bite-sized pieces
1/4 cup fresh dill, minced
2 pkgs. water crackers
Method/Steps
1. Put the beets in a shallow baking dish, drizzle with olive oil and sprinkle with the salt. Turn to coat well. Roast until the beets are easily pierced with the tines of a fork, about 1 hour and 20 minutes. Let cool.
2. Slip off the skins and slice the beets into 1/4 inch thick slices. Top each each cracker with a slice of beet. Dollop a bit of cream cheese on top of the beet; add a piece of trout and a sprinkle of dill.


Wine and Spirits Match
Sauvignon Blanc would be very nice here.
