Goat Cheese and Apple Salad
Ingredients
3 red apples
1 Tbsp lemon juice
6 – 12 romaine leaves, washed
Baguette sticks (recipe follows)
6 firm, ripened goat cheese rounds (about 1-1/2 oz each)
Honey-Mustard Dressing (recipe follows)
Baguette Sticks
1 baguette, cut lengthwise into nine 6-inch long sticks.
3 Tbsp melted butter
Honey-Mustard Dressing
3 Tbsp each extra virgin olive oil and cider vinegar
1 Tbsp honey
1-1/2 Tbsp Dijon mustard
Method/Steps
1. Quarter and core apples; slice lengthwise 1/3-inch thick. Mix gently in a bowl with lemon juice. Arrange apples, lettuce leaves and baguette sticks on 6 salad plates.
2. Place cheese on a baking sheet and broil 2-inches from heat until lightly browned, about 5 minutes. Place 1 cheese round on the lettuce leaf. Serve Honey-Mustard Dressing on the side.
Baguette Sticks
Brush baguette with butter, and place cut side up on a baking sheet. Bake in a 350°F oven until golden, about 15 minutes.
Honey-Mustard Dressing
In a small bowl, whisk all ingredients together until blended.
