Glazed Peach Pie
Ingredients
7 ripe peaches
3/4 cup orange juice
3/4 cup sugar
3 Tbsp cornstarch
2 Tbsp lemon juice
1 baked 10-in pie shell, store-bought or home-made
2 to 3 tsp orange peel, finely shredded
2 or 3 fresh mint sprigs
Method/Steps
1. Peel, pit and slice enough peaches to make 1 cup. Whirl slices in a food processor or blender until smooth. Gradually add orange juice as the peaches are being puréed.
2. In a pan, stir sugar with cornstarch. Add peach purée; mix well. Stirring, bring mixture to a rolling boil on high heat. Cool purée quickly by setting the pot in ice water and stirring frequently until just slightly warm.
3. Meanwhile, peel, pit and thinly slice remaining peaches; mix with lemon juice to help preserve their colour. Gently stir fruit slices and juice into the purée, then pour the mixture into the pie shell. Chill until cool, about 45 minutes or up to 4 hours. Garnish pie with shredded orange peel and mint sprigs.
