Ginger Bars
Ingredients
1 cup whole wheat flour (use spelt for gluten-free diets)
1/4 cup sugar
1/2 tsp baking soda
3 Tbsp crystallized ginger, chopped
1/4 cup milk
1/4 cup molasses
2 large egg whites
Method/Steps
1. In a large bowl, stir together flour, sugar, baking soda and crystallized ginger. Add milk, molasses and egg whites; beat until smooth.
2. Spread batter evenly in a nonstick 8 inch square pan. Bake in a 350°F oven until cake begins to pull away from the sides of the pan and springs back when lightly touched in centre, about 20 minutes. Cut into 2 inch squares.
