Gazpacho
Some people prefer to blend all the ingredients together while others prefer the look of mixed and chopped ingredients. Experiment to find which method is your favourite.
Ingredients
2 large ripe tomatoes, seeded, peeled, chopped
1 large sweet green pepper, seeded, chopped
1 clove garlic, minced
1/2 cup mixed herbs: chives, parsley, basil, tarragon, chopped
1/2 cup olive oil
3 Tbsp lemon or lime juice
3 cups chicken or vegetable stock, chilled
1 sweet Spanish onion, peeled, thinly sliced
1 cup cucumber, seeded, diced
1 1/2 tsp salt, or more to taste
2 ice cubes
Method/Steps
1. Place prepared tomatoes, green peppers, garlic and herbs into a bowl. Add olive oil, lemon or lime juice and stock. Add onion, cucumber and salt.
2. Just before serving, add ice cubes.


Wine and Spirits Match
This soup can be difficult to balance with wine. Try unoaked Chardonnay or Pinot Noir.
