Fruit Cake
Ingredients
2/3 cup butter, at room temperature
3-1/3 cups all-purpose flour
3-1/3 cups sugar
4 large eggs
1-2/3 cups applesauce
1-1/2 tsp lemon zest, grated
2 tsp baking soda
1-1/2 tsp ground ginger
1/2 tsp ground coriander
1/2 tsp baking powder
3/4 cup dried mangoes, coarsely chopped (dried apricots are a good substitute)
3/4 cup dried pineapple, coarsely chopped
2/3 cup roasted macadamia nuts, coarsely chopped
1 tsp salt
Method/Steps
1. Grease baking pan.
2. In a large bowl, beat butter and sugar until well combined. Beat in eggs until blended. Stir in applesauce and lemon zest.
3. In another bowl, mix flour, baking soda, ginger, coriander, baking powder and salt. Add to egg mixture and beat until blended. Stir in mangoes, pineapple and nuts.
4. Pour into prepared pan. Bake at 325°F for about 1-1/2 hours, or until cake has browned lightly, is pulling away from sides and a toothpick inserted into the centre comes out clean.
5. Set cake (still in the pan) on a rack to cool for about 15 minutes. To remove, run a thin-bladed knife around the edges, then invert on a rack. Cool completely before serving.
