Devilled Eggs with Fava and Caper Filling
Ingredients
4 hard-boiled eggs
100 g fava beans
1 tsp olive oil
1 garlic clove, whole
1 Tb capers
3 Tb mayonnaise
salt and pepper, to taste
Method/Steps
1. Boil eggs. Peel, cut them in half and remove yolks. Place yolks into a bowl, and place whites on a serving platter.
2. Sauté fava beans in oil with the garlic clove. Season to taste.
3. Place cooked fava beans in the bowl of a food processor with capers, mayonnaise and egg yolks. Process until smooth. Season with salt and pepper. Place the mixture into a pastry bag and fill each egg white.
