Cucumber Salad
Be sure to choose firm cucumbers for this dish. English Cucumbers are the easiest to use because they contain minimal seeds. Otherwise, you can remove the seeds from other cucumber varieties with a small spoon.
Ingredients
Cucumbers
Yogurt Dressing (recipe follows)
Parsley, chopped
Yogurt Dressing
1 cup plain yogurt
Salt
Pepper
Chopped fresh herbs
Method/Steps
Chill the cucumbers. Pare them by running the tines of a fork along the length of the cucumber from top to bottom. Slice them into thin rounds. Combine with dressing. Sprinkle parsley over top and serve immediately.
Yogurt Dressing
Combine all ingredients and chill. Makes about 1 cup.
