Cranberry Liqueur
Dried cranberries sometimes contain a trace amount of oil on the surface. Take a moment and use paper towels to blot off any oily film floating on the strained liqueur.
Ingredients
4 cups vodka
4 cups sugar
1 lb dried cranberriesMethod/Steps
1. In a large pan, combine vodka and sugar. Stir often over medium heat until mixture reaches 125°F, about 5 minutes. Watch carefully; if overheated, fumes may ignite.
2. Place cranberries in a wide-mouth glass jar (large enough to hold at least 2 litres). Pour in hot vodka mixture. Seal jar. If the seal is rubber, cover the glass top with plastic wrap; the alcohol can soften it. Let stand at least 1 week or up to 2 months.
3. Line a strainer with 4 layers of damp cheesecloth and set over an 8-cup glass measure or bowl with a pour spout. Pour liqueur and fruit, a portion at a time, through the cloth. When the fruit is no longer dripping, store and save for other uses; wrap tightly and refrigerate up to 3 months.
4. Pour liqueur into small bottles; seal until airtight. Serve liqueur, or store in a cool, dark place up to 1 year.
