Crab Cakes
Ingredients
2 Tbsp butter
1 onion, chopped
1/3 lb shelled cooked crab
1/2 cup fine dry bread crumbs
1/4 cup finely chopped green onion
1 egg, beaten
1/4 cup skim milk
Method/Steps
1. In a large nonstick frying pan, melt 2 tsps of the butter over medium heat. Add onion and cook, stirring often, until it's lightly browned and sweet, about 20 minutes.
2. In a bowl, combine cooked onion, crab, bread crubs, green onion, egg and milk; mix well. Divide mixture into 6 equal parts and shape each into a patty about 3 inches in diameter.
3. In the frying pan, melt the remaining butter over medium-high heat. Cook the patties in a single layer until bottoms are lightly browned, 4 minutes. With a wide spatula, carefully turn patties over and cook to brown the other side, about 4 minutes.
