Court Bouillon

A court bouillon is a seasoned liquid that is cooked for only a short time. Once it has simmered for 30 minutes, it can be used to blanch vegetables or to gently cook fish or snails.

1 litre boiling water

2 Tbsp lemon juice

2 Tbsp water

1 Tbsp flour

1 stalk celery, chopped

1 carrot, chopped

1 onion, chopped

1 Tbsp whole cloves

Method/Steps

1. Bring water and lemon juice to a boil.

2. Meanwhile, blend water and flour together in a small bowl until smooth. Add to the boiling water mixture.

3. Add vegetables. Reduce heat to simmer, and cook for 30 minutes.
