Corn Fritters
Ingredients
Canola oil
1 cup all-purpose flour
2 large eggs, separated
2/3 cup milk
10 oz frozen corn kernels, thawed (canned will do just fine here, too)
Salt
Method/Steps
1. In a large pan, heat 2 inches of oil to 375°F.
2. Whisk flour, egg yolks and milk until smooth. Stir in corn; add salt to taste. In another bowl, whip egg whites just until soft, moist peaks form. Gently for corn mixture into egg whites.
3. Spoon batter, about 2 tablespoons at a time, into the hot oil. Make sure not to crowd the pan. Cook, turning once or twice, until fritters are golden brown, about 5 minutes. Lift fritters with a slotted spoon and let drain on a paper towel. Keep warm.
