Company Shrimp With Beans
Large uncooked frozen shrimp are so convenient and often on sale. Pick up a bag next time the price is right and pair with beans for an elegant entrée. Garlic will keep in the fridge for quite a while, but for convenience’s sake, you can use jarred minced garlic instead. If you’d like, add a can of diced tomatoes to this dish.
Ingredients
2 tbsp olive oil
1 clove garlic, minced
1 tsp dried rosemary, crumbled
1 bag shrimp, defrosted, peeled and drained (450 g)
1 tin cooked cannellini beans, drained
1/2 cup chicken broth
salt and freshly ground pepper to taste
olive oil for garnish
Method/Steps
Heat the olive oil in a large skillet. Add the rosemary and cook until fragrant. Add the shrimp and sauté for 2 minutes. Add the garlic and sauté for 1 minute more. Stir in the beans and cook for 1 minute.
Add the broth and simmer until the shrimp are cooked through. Season with salt and pepper to taste. Divide the shrimp and beans among 4 plates. Drizzle with olive oil.
