Coffee Granita
Recipe adapted from Cosmic Cuisine - The Astrological Cookbook by Tom Jaine and Nicholas Campion.
Ingredients
4 oz espresso coffee
2 cardamom seeds
4 oz sugar
2 cups water
Method/Steps
1. Put the coffee, cardamom and half the sugar into a pan with the water. Bring it nearly to a boil. Remove from heat and infuse for 20 minutes, then strain.
2. Pour the rest of the sugar into a separate pan. Heat until the sugar begins to caramelize. Be careful not to burn it. Very carefull,add the coffee mixture to the caramelized sugar. Stir to dissolve. Set aside to cool.
3. Put the mixture into a tray or a container. Place it in the freezer Do not disturb. When it reaches the desired consistency, serve with amaretto cookies.
