Citrus Curd
Spread this delicious curd on toast and croissants, use it to fill pastry shells, or pour into a pretty jar and give it away.
Ingredients
5 Tbsp butter
2/3 cup citrus juice (lemon, lime, orange, blood orange)
2/3 cup sugar
2 large eggs
4 egg yolks
1-1/2 Tbsp grated citrus zest
Method/Steps
1. In a large frying pan, melt butter over medium heat. Remove from heat; add citrus juice and sugar, whole eggs, egg yolks and zest.
2. Stir to blend well, then stir over low heat until mixture thickly coats a metal spoon, about 8 minutes.
3. Pour into small jars, let cool. Cover and chill.
