Chocolate Strawberries with Cream and Pineapple
This recipe is adapted from Tom Jaine's and Nicholas Campion's book, Cosmic Cuisine - The Astrological Cookbook (Windward).
Ingredients
4 oz bittersweet chocolate
3 tsp Cherry Heering (or other cherry flavoured liqueur)
16 strawberries, stems intact
6 oz whipping cream
1 tsp icing sugar
1 tsp vanilla sugar (or vanilla extract)
4 slices fresh pineapple
Method/Steps
1. Melt chocolate with 1 tsp of the cherry liqueur in a double boiler (over, not in, simmering water). Dip the strawberries halfway into the chocolate. Let sit on wax paper until chocolate has set.
2. Whip the cream with the sugars and remaining cherry liqueur until stiff. Place pineapple slices onto a plate, spoon the cream into the centre of the plat and place a few strawberries on top of the cream.
