Chilled Tomato Soup
Ingredients
1/4 cup extra-virgin olive oil
1 onion, minced
3 garlic cloves, minced
3 lbs ripe tomatoes, roughly chopped
1 red bell pepper, seeded and chopped
2 Tbsp sherry vinegar
1 tsp thyme
2 Tbsp basil, chopped
Salt
Pepper
Sugar (optional)
Method/Steps
1. Heat the oil in a pot over medium heat. Add the onions and cook until soft. Add the garlic. Add the tomatoes and bell peppers, reduce the heat and simmer for 15 minutes.
2. Add the vinegar, thyme and basil. Remove from the heat and purée in a food processor or blender. Season with salt and pepper. If the tomato is too astringent, add a bit of sugar to taste. Serve chilled.
