Chicken, Mango and Roquefort Salad with Orange-Mango-Cranberry Vinaigrette
Pick up cooked chicken fillets, bagged salad, cheese, mango and ciabatta bread at the supermarket on your way home from work and assemble this salad in minutes. The hearty vinaigrette pairs well with leftover turkey too.
Ingredients
1/2 cup whole-berry cranberry sauce
1/4 cup orange mango juice or orange juice
1 tbsp extra virgin olive oil
2 tablespoons balsamic vinegar
1 tsp sugar
Salt, to taste
1 bag romaine lettuce
1 mango, peeled and diced
60 g Roquefort cheese, crumbled
1/2 cup red onion, minced
4 chicken fillets, cooked and sliced
Ciabatta bread

Method/Steps
1. In a medium bowl, whisk cranberry sauce, orange mango juice, olive oil, balsamic vinegar, sugar and salt.
2. On four plates, arrange romaine lettuce, mango, Roquefort cheese, and red onion. Top with sliced chicken and vinaigrette. Serve with ciabatta bread and butter.
