Chicken Breast and Calvados Sandwich

1 apple

1/4 cup Calvados brandy (or apple juice)

1/4 tsp ground nutmeg

2 boneless chicken breasts

2 slices Provolone cheese

Parsley, chopped

2 panini buns

Method/Steps

1. Peel, core and thinly slice apple. Lay slices at the bottom of a shallow baking dish. Add Calvados and half the nutmeg. Seal baking dish with foil.

2. Bake apples in a 400°F oven until tender, about 20 minutes. Rinse chicken and pat dry. Place chicken breasts into the baking dish on top of the apples. Baste the chicken with the juices, then sprinkle with remaining nutmeg.

3. Bake, uncovered, until chicken is no longer pink, about 12 minutes. Top chicken with cheese. Broil about 6 inches from heat until cheese is bubbling, about 2 minutes. Sprinkle with parsley. Let cool. Lay each chicken breast and some apple slices in the panini buns.
