Champagne Risotto
Ingredients
4 cups chicken stock
5 Tbsp olive oil
1 onion, chopped
2-1/2 cups Carnaroli rice
4 cups Champagne or sparkling wine
1 cup parmesan cheese, grated
Salt
Method/Steps
1. Heat olive oil in a large pot. Add onion and sauté over medium heat until soft, translucent and beginning to caramelize. Add a pinch of salt. Add rice and stir. Add Champagne, and cook until almost evaporated.
2. Stir in 1 cup of stock; stir. As broth is absorbed, add another 1/2 cup at a time until rice is as dente. Stir in parmesan cheese. Serve immediately.
