Cauliflower with Toasted Mustard Seed
Ingredients
3 Tbsp mustard seed
1 cauliflower head, stem and leaves trimmed
1-1/2 cups plain low-fat yogurt
1/4 cup fresh mint leaves, minced
1 tsp ground cumin
1 head romaine lettuce
Method/Steps
1. Pour mustard seed into a small frying pan set over medium heat. Cook, shaking pan often, until seed turns gray, about 5 minutes. Set aside.
2. Cut the cauliflower into bite-size pieces. Steam cauliflower until tender, about 8 minutes. Set aside.
3. In a large bowl, stir together the yogurt, mint, cumin and 2 Tbsp of the mustard seed. Add the cauliflower and mix well.
4. Arrange romaine leaves on a serving platter. Spoon cauliflower alongside romaine. Sprinkle remaining mustard seed over cauliflower.
