Carne Asada (Marinated Flank Steak)

This is a very yummy grilled flank steak recipe that I tried for the first time in Southern California. It’s a no-fail recipe that makes good use of a tough cut of beef. Serve with hot tortillas and salsa or with a side of grilled corn on the cob.

2 lbs flank steak, thinly sliced

1/2 cup tequila (optional)

1/4 cup lime juice

1/4 cup lemon juice

2 garlic cloves, crushed

1 onion, chopped

2 tsp black pepper

1 jalapeño pepper, chopped

Method/Steps

Pour tequila, lime juice and lemon juice into a large bowl. Add garlic, onion, black pepper and jalapeño pepper. Lay slices of flank steak into the marinating liquid. Make sure all sides are coated. Refrigerate for up to 8 hours. Before grilling, bring to room temperature. Sprinkle steaks with salt and grill for 1 to 2 minutes per side.

Variation: Flank steak can be grilled whole, then cut into slices immediately before serving.
