Blackened Catfish
This dish comes together in minutes, but be sure to turn on the fan because the cooking process creates some smoke. Serve French fries and a cooling side of coleslaw with the catfish.
Ingredients
4 – 6 catfish fillets
1 tbsp sweet Hungarian paprika
2 tsp salt
1 tsp cayenne pepper
1 tsp onion powder
1 tsp garlic powder
1/2 tsp white pepper
1/2 tsp black pepper
1/2 tsp thyme
1/2 tsp oregano
1 tbsp olive oil
Method/Steps
On a plate, mix together paprika, salt, cayenne pepper, onion powder, garlic powder, white pepper, black pepper, thyme and oregano.
Dredge catfish fillets in spice mixture.
In a large cast iron skillet, heat olive oil over high heat. Sauté catfish fillets 3 to 5 minutes per side or until cooked through.


Wine and Spirits Match
A palate-soothing light-to-medium dry white such as a Chablis or Riesling will pair well with the catfish.
