1 lb sour pitted cherries

3/4 cup kirsch (cherry brandy)

500 ml 35% cream

2 cups sugar

1/2 cup cocoa

1 cup buttermilk

1/2 cup butter

2 eggs

2 cups cake or all-purpose flour

1 tsp baking soda

1/2 tsp salt

1 tsp vanilla

Method/Steps

1. Combine and beat until well blended 1 cup sugar, cocoa and 1/2 cup buttermilk; Set aside.

2. Sift together flour, baking soda and salt.

3. Beat butter until soft. Gradually add 1 cup sugar; continue beating until light. Beat in eggs, one at a time. Stir in cocoa mixture. Add flour mixture alternately with remaining 1/2 cup buttermilk and vanilla.

4. Grease two round 9-inch cake pans. Sprinkle sugar over the bottom of each. Pour batter evenly into each pan. Bake for about 1 hour in a pre-heated 350°F oven.

5. Combine cherries and 2 cups sugar in a bowl; set aside. Beat 35% cream until whipped to stiff peaks.

6. Split cooled cake in half lengthwise. Sprinkle top and bottom layer with kirsch. Spread with whipped cream and cherry mixture. Replace top cake layer. Spread remaining whipped cream over entire cake. Decorate top with shaved chocolate and cherries.
