Beef Tenderloin Salad

This recipe has 3 components to it -- beets, goat cheese phyllo packets and an egg. You can choose to put all three together on one dish, make 3 distinct dishes, or create one unique combination.

3 beef tenderloin steaks

Marinade (recipe below) 

2 tsp hot mustard (like Dijon, hot Russian mustard or Czech mustard)

Goat cheese

Beets, cooked and sliced into quarters (optional)

1 egg, fried (optional)

Goat cheese phyllo packet (optional)

Marinade

2 Tbsp wine vinegar

1 Tbsp honey

3 Tbsp mustard

Fresh thyme, to taste

Salt

Pepper

1 tsp chili flakes

1 tsp sweet paprika

Potato Pancakes

4 potatoes, grated

1 egg

3 garlic cloves, crushed

1 Tbsp of all-purpose flour

2 Tbsp bacon, fried and chopped 

Salt

Pepper

Arugula Salad

2 cups baby arugula

1 garlic clove, minced

1 Tbsp pine nuts

Balsamic vinegar, to taste

Olive oil, to taste

Goat cheese

Goat Cheese Phyllo Packets

Goat cheese

1 tsp olive oil

Pepper

3 sheets phyllo pastry

Egg wash

Beets

1 beet, cooked

Salt

Pepper

Olive oil

Method/Steps

Beef Tenderloin

Stir all marinade ingredients together. Add tenderloin. Set aside for 4 hours or overnight. Grill until beef has reached desired doneness. Spread mustard over the top; set aside and keep warm.

Potato Pancakes

Grate potatoes either with a box grater or with a food processor. Place grated potato in a bowl and set aside. Fry bacon until crisp. Add all remaining ingredients, including bacon, to the potatoes. Stir until well combined. Set a frying pan over medium heat. When hot, add 2 tablespoons of the potato mixture to the pan. Press mixture with the back of a spoon to flatten. When the bottom has browned, flip the pancake over. Set aside and keep warm.

Arugula Salad

Combine all ingredients and set aside.

Goat Cheese Phyllo Packets

Stack 3 sheets of phyllo on top of each other. Cut goat cheese into a 1-inch slice, lay it at the top end of the phyllo sheet. Sprinkle remaining ingredients, except the egg wash, over the goat cheese. Roll up the goat cheese and phyllo packet, tucking the ends in as you roll. Brush the top with egg wash and bake at 400°F or fry in a hot pan until golden and crispy.

Beets

Roast, boil or microwave beets. When cool to the touch, cut into quarters. Sprinkle with salt, pepper and olive oil. Fry quickly in a hot pan until heated through.

Assembly

Variation 1

Tenderloin and Goat Cheese Phyllo Packet

Lay one potato pancake on the plate. Top with half of the beef tenderloin, if it's a large cut. Sprinkle a handful of arugula salad over the top. Place one goat cheese phyllo packet on top.

Variation 2

Tenderloin and Beets

Lay one potato pancake on the plate. Top with half of the beef tenderloin, if it's a large cut. Sprinkle a handful of arugula salad over top of the steak. Place a few beet quarters over the salad. Break goat cheese into small pieces and place around beets.

Variation 3

Tenderloin and Egg

Lay one potato pancake on the plate. Top with half of the beef tenderloin, if it's a large cut. Place egg over the steak. Sprinkle a handful of arugula salad over top, and add a slice or two of tomato.

Wine and Spirits Match

With so many flavours, pairing a wine with this dish could prove tricky. But, the dominant flavour is an earthiness that comes from the mustard. So, try a Cabernet Sauvignon or Barolo. Both of those wines will bring out the rustic, deep flavours of this dish.
