1-1/3 cups all-purpose flour

1 cup quick-cooking oats

1/2 cup sugar

2 tsp baking powder

1 tsp ground cinnamon

1/2 tsp baking soda

1/2 cup raisins

1 cup mashed ripe bananas

1/4 cup milk

2 large egg whites

1 tsp vanilla

Method/Steps

1. In a large bowl, stir together flour, oats, sugar, baking powder, cinnamon, baking soda and raisins. Add bananas, milk, egg whites and vanilla; beat until smooth.

2. Spread batter evenly in a nonstick 9 x 13 inch pan. Bake in a 350°F oven until cake is golden brown, about 35 minutes. Cut into 2 inch squares.
