Balsamic Onion Confit
This takes forever to make, but man, is it good!
Ingredients
1 lb onions, diced
3 tbsp butter
2 tbsp sugar
3/4 tsp salt
1/2 tsp pepper
3 tbsp balsamic vinegar
Method/Steps
1. Combine onions, butter, sugar, salt and pepper in a heavy, small saucepan. Cook, stirring regularly, until very soft and light golden brown (approximately one hour).
2. Add the vinegar and reduce to a syrup. Mixture should be very moist and resemble a compote or jam. Spread on bread or toast.
