Baked Eel
This white, meaty fish has great flavour whether its prepared simply or not. Rice and sautéed spinach make delicious accompaniments.

1/2 cup olive oil
2 Tbsp wine vinegar
2 bay leaves
1 tsp salt
1/2 tsp pepper
1 Tbsp bread crumbs
2 lbs eel, skinned and cut into 4-inch pieces
Additional bay leaves
Method/Steps
1. Mix together oil, vinegar, bay leaves, salt, pepper and bread crumbs. Marinate eel pieces in this mixture 3 hours, turning frequently.
