Baked Cod with Panko Gremolata

I’ve become a big fan of Japanese breadcrumbs known as panko, and I’ve always loved gremolata, a mixture of parsley, lemon peel and garlic. Together, they make a big impact on a simple baked fish fillet.

1 cup panko crumbs
 
2 tbsp chopped fresh parsley
 
2 tsp lemon peel
 
1 garlic clove, crushed with a pinch of salt
 
3 tbsp melted butter
 
4 cod fillets

Method/Steps

Preheat oven to 350˚F.
 
Mix together panko, parsley, lemon peel, garlic and butter.
 
Place cod in baking dish that has been coated with cooking spray. Pat panko gremolata on top of the cod. Bake 15 minutes or until fish is cooked through and topping is browned.
 
Serve with green beans and boiled tiny new potatoes.
