Bacon Wedge Salad with Blue Cheese Dressing

I ordered a wedge salad on one of my first dates back in the 1960s and felt very grown-up doing so. This satisfying salad fell out of fashion for many years but is now popping up on restaurant menus again.

Salad

1 small head Iceberg lettuce
1 cup grape tomatoes, sliced in half
1/4 cup diced red onion
1/2 pound bacon, cooked and diced
Freshly ground pepper

Blue Cheese Dressing

1/2 cup mayonnaise
1 clove garlic, minced
1/4 cup sour cream
2 tsp fresh lemon juice
1 tbsp cider vinegar
3 tbsp buttermilk
1/2 cup crumbled blue cheese
Salt & freshly ground pepper

Method/Steps

Blue Cheese Dressing

In a small bowl whisk ingredients together.

Assembly

Cut 4 to 6 wedges from the lettuce. Place each wedge on a plate. Scatter tomatoes, red onion and bacon over each wedge.

Top with Blue Cheese Dressing. Season with pepper to taste.

A sleek and acidic Sauvignon Blanc would pair well with this salad. Try a Sancerre or Pouilly-Fume from the Loire Valley.
