Asian Noodle Bowl
So simple to make with so few dishes to clean up - a nutritious dinner in a bowl. This dish can be prepared quickly in the microwave. However, a wok or frying pan can be used as an alternative.
Ingredients
8 oz extra lean ground beef sirloin or round
2 tbsp soy sauce
1 tsp fresh ginger, minced
1 clove garlic, minced
1 cup beef broth
1 pkg fresh Asian noodles
½ cup frozen peas
¼ cup sweet red pepper, thinly sliced
1 small carrot, grated
1 green onion, thinly sliced
¼ cup roasted peanuts, chopped
Method/Steps
1. Combine beef, soy sauce, ginger and garlic in small microwavable casserole dish.
2. Gradually stir in broth.
3. Add noodles, peas and red pepper. Mix well and cover tightly with lid or plastic wrap.
4. Microwave at 70% power for 8 minutes.
5. Let stand for 5 minutes; mix well.
6. Check temperature. Thermometer should read 160ºF (71ºC). If not, cook another 30 to 60 seconds on High.
7. Stir in carrot and green onion.
8. Top each serving with peanuts.

Serve with either a cup of hot, fresh green tea or a glass of Gewürtztraminer.
