Aïoli (French Garlic Dip)
Perfect drizzled over fish, potatoes or beef.
Ingredients
4 garlic cloves, minced
2 egg yolks
Pinch of salt
1 cup extra virgin olive oil
1/2 tsp cold water
1 tsp lemon juice
Method/Steps
Combine garlic, egg yolks and salt; blend well. Pour olive oil, in a thin, steady stream, into the garlic mixture, beating constantly. As the sauce thickens, beat in water and lemon juice.
