Mild sweet leeks are available year round but their peak season begins in the fall. Trim off the root end and green leaves, and use only the tender white part. Be sure to wash thoroughly as leeks can be gritty. Mushrooms, like leeks, are grown in dirt. Although some cooks prefer to gently wipe mushrooms, I always wash them in cold running water, patting them dry afterward with a paper towel.

More Canada at Karlovy Vary

Last week, from July 2 to July 10, six Canadian films were presented at the Karlovy Vary International Film Festival in the Czech Republic. Catherine Martin's Trois temps après la mort d'Anna made its world premiere in the Official Selection, the only North American film featured in the Festival's Competition this year. Meanwhile, Patrick Demers' feature film debut Jaloux had its world premiere in the Forum of Independents Competition.

Here are the other Canadian films at the Karlovy Vary International Film Festival:

Chloe - Atom Egoyan
Tucker and Dale Vs Evil - Eli Craig (Canada/USA)
Mr. Nobody - Jaco Van Dormael, (Canada/Belgium/France/Germany)
