Here's one of my stand-by recipes, perfect for any busy weeknight or for those special occasions when you want to show off your superb culinary know-how. I used a glass of Chenin Blanc in the recipe, so that would be a natural to have with this risotto. But, Chardonnay, Sauvignon Blanc or even an Amarone would be fabulous!
