First, despite appearances to the contrary, this rice has nothing at all to do with magic mushrooms.

It's actually rice that doesn't need to be cooked (at least in the traditional way) before it's eaten. Instead of letting it simmer away for 45 minutes or so on the stovetop (or seconds in the micro, of course), all you need to do is add a little room temperature water. Neat, eh? Called Aghani Bora, it's being developed in India as an answer to poverty and the negative environmental effects of using gas or electricity to cook one's meals.
