Tomorrow is the first day of spring. How do you celebrate it?

I thought I'd put together an eclectic menu that will help us say farewell to winter and welcome the warmer weather. Dried legumes usually make me think of the kind of comfort food one needs on a cold, blustery day. But, this recipe, featuring lentils, is a fresh and light take on a hearty staple. Try it as an appetizer or a side dish. The February/March issue of Tidings Magazine featured an interview with Chef Andrew George Jr. I've included a couple of his recipes here in honour of his passion for seasonal, indigenous fare.
