Mid-July already, and the weather is fabulous. What have you been doing to keep cool?

As wonderful as it is to step out and enjoy the sun's scorching rays, heat does play havoc with appetites. The last thing on everyone's mind during a heat wave is food. So, drink up during the daylight hours, stay hydrated. Then, when the sun starts to set, light the barbecue and enjoy this quick and appetizing Mexican-inspired feast.

Mexico's climate, depending on where and when one goes, can be very hot and humid. Mexican cuisine complements that climate with recipes that feature hot, sweet and tart dishes. That combination offers a wonderful palette of flavours and colours. As an extra bonus is the spicy heat which keeps the body comfortably cool.

Take it from a culture that has spent centuries learning how to thrive in extreme temperatures and humidity, heat, sweet and tart are definitely the way to go. Cook up these treats and see if you don't agree.
