Have you noticed how cake decorating as changed lately? Maybe it's the influx of shows, like Ace of Cakes, Cake Boss or Last Cake Standing Challenge, but cakes seem to be much more elaborate than they used to be. They're also now completely covered in fondant instead of icing. Although fondant might offer more leeway in terms of decorating, my personal preference is for the look and taste of whipped cream icing.

Cake baking and decorating doesn't have to be challenging. And you certainly don't need to have a designer's eye to make it appetizing and beautiful. All you need is a really good recipe and a pinch of imagination.

Here are two cake recipes that you can make to celebrate any occasion, even the onset of spring and summer! The first one, an airy sponge cake filled with a mouth-puckering lemon curd and the second, a rich chocolate cake peppered with raspberries are perfect for any gathering.
