This time of the year brings with it lots of great reasons to celebrate -- Easter, Passover, Spring, Planting Season -- anything at all. The longer days and warmer temperatures entice us out of doors despite the sometimes rainy and blustery weather. I've put together a few easy and delicious recipes that I really like to make any time I can. I know the trend these days is to serve lamb rare to medium-rare; but, I actually prefer it well done. I find that the flavour of the meat and the herbs I use to marinate it are accentuated by the longer cooking time. If you typically avoid eating lamb because of its strong flavour, you don't have to worry. Lamb meat isn't nearly as gamey as it once was thanks to changes in the feed. Also, marinating the meat overnight not only tenderizes it, but decreases whatever gamey flavour it may have.

Not all grocery stores carry orzo pasta, so you can use cooked rice or a different kind of pasta, if necessary. The addition of mint and tomatoes give this salad a burst of refreshing flavour. Zabaglione is actually a creamy and light-tasting end to this meal that pairs very well with a cup of espresso.
