Nutritionists tell us that breakfast is the most important meal of the day. Yet, for many of us, a quick cup of java and an energy bar are the most we can manage to squeeze into the rushed minutes between waking up and getting out the door. At my house, Saturday morning is the time to linger over a cappuccino while we enjoy pancakes, eggs, toast and fruit. Sometimes, I get a hankering for coffee cake or a cinnamon bun, both of which can be put together fairly quickly and easily either the night before or that morning before the rest of the household wakes up.

Many of the recipes below can be made the day before and quickly re-heated for breakfast in a microwave, conventional oven or toaster. The entire breakfast comes together very quickly -- just add coffee, tea and juice. If the thought of waking up before 11 am has you second-guessing my sanity, why not aim for brunch? If you happen to have guests staying the night, a homemade, fun and tasty breakfast or brunch is a fabulous way to make them feel welcome. Make it a group effort and get everyone involved in the preparation.
