Winter Warmup 6 large carrots, diced
2 large onions, diced
1 large potato, diced
1 tbsp butter
1 tbsp olive oil
1 tsp sesame oil
1 tsp curry powder
1 tsp ground cardamom
1/2 cup whipping cream
6 cups chicken stock
dash of Tabasco sauce
dash of Worcestershire sauce
dash soya sauce
salt and freshly ground pepper
handful of finely chopped fresh (or dried) herbs: oregano, rosemary, sage, thyme
blue cheese or Stilton
Simmer and sweat the diced vegetables in the butter, olive and sesame oil over medium-high heat. Add the curry, cardamom, ground pepper, Tabasco, Worcestershire sauce and herbs, bringing all of the ingredients together.
Add the stock and bring to a boil, then reduce heat and simmer for 30 minutes until the vegetables are soft.
Blend the mixture in a food processor, then season further with salt and soya sauce to taste.
Before serving, stir in the whipping cream. Do not boil. As an extra touch, add a knob of Stilton to each bowl. If you wish, a minute or so under the broiler will work extra wonders. You’ll need some great bread and lots of butter.

Serve the following chilled to counter the curry’s sharpness, the strong flavour of the sesame oil, the bite of the hot sauces and spices and the tang of the blue cheese: Alsatian or Okanagan Gewürztraminer; Chilean, Californian or Okanagan Viognier; Gamay Noir or Valpolicella.
