Grilled Zucchini with Basil Balsamic Vinaigrette

1/4 cup fresh basil, chopped

3 Tbsp balsamic vinegar

1 Tbsp Dijon mustard

1 tsp honey or maple syrup

2 garlic cloves, minced

1/3 cup olive oil

8 yellow and green zucchini, rinsed, ends trimmed, and cut into 1/2 inch thick rounds

 

Method/Steps

1. In a small bowl, mix chopped basil, vinegar, mustard, honey and garlic. Whisk in oil.

2. Thread zucchini on thin skewers so the rounds lie flat and pieces touch. Brush generously with basil vinaigrette.

3. Place zucchini on a grill and cook until brown on each side, 5 to 7 minutes; turn once.

4. Push zucchini from skewers onto a platter. Drizzle with remaining vinaigrette. Add salt and pepper to taste.
